pump direction being field reversible, does that mean I can swap it around on the machine without pullin' the whole unit and sendin' it back out?

Field reversible means you can change the rotation direction right where the equipment sits, no need to pull the pump and ship it anywhere. That kind of flexibility matters when you're retrofitting into an existing setup or working with a system where the hydraulic connections runs a certain way. It saves real time on installations where the flow direction wasn't planned out from the start.
