Reckon this gear pump would hold up okay on some farm equipment, like a tractor or combine?

pump says it's field reversible -- does that mean I can swap the rotation direction myself out in the shop, or is that more of a factory-set thing?

Field reversible means you can change the pump's rotation direction without sending it back anywhere. It's something that can be done on-site, which is real handy when you're swapping it into a setup that runs the opposite direction from what the original pump did. No factory involvement needed for that.
