trying to swap out an old elbow, what threads are on each end of this 04MJ-02MP?

On the B1 end you get a male JIC SAE 37 degree flare thread in 7/16-20, built to SAE J514. The B2 end is a male NPTF pipe thread in 1/8-27, built to SAE J476.

rated to 6,000 PSI dynamic -- does that hold up running a hydraulic line that sees pretty regular pressure spikes, or is that the ceiling you don't want to push past?

6,000 PSI is the maximum dynamic pressure rating for this fitting, so that number already accounts for pressure conditions in active hydraulic systems rather than just static loads. Forged steel construction gives it solid resistance to mechanical stress, which helps when a line cycles through pressure changes repeatedly. That said, staying reasonably below the rated ceiling during normal operation is always the smarter way to protect any fitting long term.
