Reckon this elbow fitting can handle a hydraulic system pushing up to 5,000 psi? Don't want no blowouts.

Got a 1/2-inch NPTF port on a manifold block and need to make a 90-degree turn coming off it, this fitting got a JIC end that'll work on the other side?

Yeah, that's exactly what this elbow is built for. One end is a 3/4-16, wait, let me correct that, it's a 1-1/16-12 male JIC with the standard SAE 37-degree flare, and the other end is a 1/2-14 male NPTF. So you'd thread the NPTF side into your manifold port and connect your JIC line on the other end. Both thread specs are covered under SAE J514 and SAE J476, so the connections are standardized and reliable.
