adapter's rated to 5,000 psi dynamic pressure -- does that hold up running continuous cycles or just peak spikes?

5,000 psi is the maximum dynamic pressure rating, which covers active working pressure under load, not just static conditions. Continuous cycling within that rating is what the spec is built around, so you're not looking at a peak-only figure here. Keep your system operating at or below that threshold and the adapter is doing what it was engineered to do.

trying to hook a JIC hose end to a pipe port, is this the right adapter or am i mixing up threads

For a JIC to pipe-thread connection, it fits that job. One end is a male JIC SAE 37 degree flare in 7/8-14 (SAE J514) and the other end is a male NPTF in 1/2-14 (SAE J476).
