Is this the right fitting if I need a male JIC on one side and a male NPTF on the other?

adapter's rated to 6,000 psi -- that hold up on a continuous-run hydraulic circuit or is that more of a peak number?

6,000 psi is the maximum dynamic pressure rating, which covers pressure under active flow conditions. That means it's not just a spike or static rating. For a continuously pressurized circuit running near that ceiling, you'd want to stay within that rated value and not push past it. Most working hydraulic systems run well below 6,000 psi, so this fitting tends to have solid headroom in typical industrial setups.
