trying to hook a 7/16-20 JIC line to a 3/8-18 pipe port. is that what this fitting does?

It adapts a 7/16-20 male JIC SAE 37 degree flare on one end (SAE J514) to a 3/8-18 male NPTF on the other end (SAE J476), in a straight steel body.

Will this fitting hold up if I'm pushin' close to that 6,000 PSI? Don't want no blowouts.

For dynamic applications, this straight adapter is rated to a maximum pressure of 6,000 PSI, so you should be good to go if you stay at or below that level.

6,000 psi is the maximum dynamic pressure rating on this adapter, so that's the ceiling for pressurized operation. As long as your system stays at or below that, you're well within spec for a standard hydraulic setup.
