What kind of stuff is this Eaton adapter good for? I work in a paper mill, and things get pretty corrosive.

Designed for robust performance, these adapters are often found in chemical processing, pulp and paper, and even marine/military applications where corrosion resistance is key. The Dura-Kote plating helps a lot.

Both ends on this are SAE 37 male fittings, right? Trying to figure out if it'll work between two female ports on a hydraulic line I'm redoing.

Correct on both counts. The 2039-8-6S has SAE 37 degree male ends on each side, so it bridges two female SAE 37 ports. One end is 3/4 inch and the other steps down to 9/16 inch, so keep that size difference in mind when you're planning the connection. The 90 degree elbow geometry also gives you some routing flexibility if space is tight around the fitting area.
