Reckon this fitting will hold up alright in a humid shop environment, or will I be wrestling with rust down the line?

Dura-Kote plating should give you good corrosion resistance, even if things get a little damp. It's made to handle demanding industrial environments, so a bit of humidity shouldn't be a problem.
