what's this fitting made out of, and would it hold up running through a wash-down area or around a lot of moisture?

316 stainless steel is the material here, which is genuinely one of the better choices when corrosion is a real concern. It handles moisture, mild chemicals, and harsh shop environments better than standard carbon steel fittings. Wash-down areas, wet applications, outdoor installations, that kind of thing is right in its wheelhouse.
