does the Dura-Kote plating on this fitting hold up decent in wet or humid conditions, or is that more of a light-duty coating?

Dura-Kote is specifically applied to give superior corrosion resistance, so it holds up better than standard plated steel fittings in damp or humid environments. The carbon steel base is what you'd expect for general purpose hydraulic work, and the coating is there to extend service life where moisture exposure is a real concern. For most shop and field applications running low to medium pressure, it does its job well.

got a -6 hose setup, is this the right 90 elbow fitting for it?
