what kind of corrosion protection does this fitting have on it? running equipment outdoors and rust has been a real problem with cheaper parts

Eaton Aeroquip put a Dura-Kote plating on these fittings specifically to hold up against corrosion better than standard finishes. For outdoor or exposed applications where moisture is a constant issue, that coating is a meaningful upgrade over bare or lightly treated carbon steel fittings. The carbon steel base gives you solid strength, and the plating adds the surface protection on top of that.

So, this fitting... it's meant for general hydraulic stuff, right? Or is there something specific it's better at?

It's designed for general purpose low and medium pressure hydraulic applications. If you're dealing with shock hazards, you'd want to look at H277 or H435 hoses instead.
