fitting's got a female SAE 45 end on it -- does that swivel piece actually rotate free before you crimp it down, or is it fixed in place?

The swivel is on the female SAE 45 end, and yes, it rotates before the assembly is crimped. That's the whole point of a straight swivel configuration -- lets you get the fitting torqued down to the port without twisting the hose during installation. Makes a real difference when you're working in a tight spot and can't spin the hose freely.

These Aeroquip fittings are generally for low to medium pressure hydraulic systems. If there's a risk of sudden pressure spikes or shocks, you'll want to use H277 or H435 hoses with them.

Got a -6 hose on the bench, is this the right end for it or am i gonna be fighting it

For hose size, it matches a -6 dash hose. The end on the fitting is a female SAE 45 degree swivel, so it is meant to connect to a matching SAE 45 degree male flare.
