fitting's got Dura-Kote plating on it -- does that actually hold up in wet or dirty conditions, or is that more of a marketing thing?

Dura-Kote is a real corrosion-resistant plating, not just a label. Carbon steel fittings without it tend to rust out faster in environments where moisture or grime is a constant. This plating is part of what Aeroquip built into the 1A Series to extend the service life of the whole hose assembly, so it's not cosmetic. If you're running equipment in conditions where fittings normally corrode within a season, this is worth paying attention to.
