Part number SS5007L-10-04, does that M16 x 1.5 side connect directly to a standard DIN tube fitting, or is there some kind of adapter sleeve needed in between?

Straight connection, no sleeve required. Side 1 is a male M16 x 1.5 DIN tube fitting at an L10 size, so it threads directly into a compatible DIN tube port without any intermediate hardware. The adapter itself is stainless and runs straight through, so there's no offset or angle to account for during installation.

trying to hook a metric DIN tube line to a 1/4 npt port, is that what this adapter does

It bridges a DIN tube connection on Side 1 to a male NPT connection on Side 2. Side 1 is M16 x 1.5 DIN tube in size L10, and Side 2 is 1/4 inch male NPT with a 1/4-18 NPTF callout.
