Fitting says JIC/SAE 37 male flare, does that mean it'll work anywhere a standard JIC male end is called for, or is there something specific about this one I need to watch out for?

JIC and SAE 37-degree male flare are the same thread form, so yes, this fitting seats and seals the same way you'd expect from any standard JIC male connection.
