That 37 degree angle is the seating surface where the fitting makes contact and forms its seal. JIC and SAE 37 degree flare fittings use that specific cone angle to create a metal-to-metal connection, which is why the two standards are generally interchangeable at the thread. The male flare on this Eaton Winner fitting is machined to that same 37 degree spec, so it mates properly with any standard JIC or SAE 37 degree female fitting.
