What's the width on this setscrew? I need to make sure it'll fit where I need it.

It has a width of 0.38 inches, according to the specs. Should give you a tight fit in most applications.

what material is this set screw made out of, and is that gonna hold up in a hydraulic application?

Carbon steel construction on this one. That's a pretty standard and proven material for set screws used in hydraulic equipment, and it holds up well under the mechanical loads these applications typically involve. The 3/8-24 thread size is also a fine thread pitch, which gives you solid holding strength once it's properly torqued down.
