fitting's got a NPTF female end on one side and a JIC 37 swivel on the other -- that right for a -16 hose size?

Correct on both counts. One end is NPTF female, the other is a 37-degree JIC swivel, and the compatible hose ID is 1 inch with a -16 dash size. The JIC end uses a 1-5/16 inch, 12-thread configuration, so as long as your hose and port match those specs, you're set up right.

What kinda corrosion protection does this fittin' have?
