fitting's made of carbon steel -- will it hold up decent against rust and corrosion out in the field?

Carbon steel is the base material, but Eaton Winner puts a Dura-Kote plating on these fittings specifically to fight corrosion. That coating gives it better resistance than you'd get from bare steel, which matters when you're running hydraulic lines in wet or dirty conditions. It's built for hydraulic system service and general industrial use, so day-to-day exposure to the elements is something the design accounts for.
