all three ends on this fitting are DIN tube type -- does that mean I can't mix in any NPT or JIC lines on the same tee?

Correct. Every port on this tee is DIN tube, M36 X 2.0, size L28. Two of the ends are male and one is female, but all three are DIN only. If your system has NPT or JIC connections, you'd need a separate adapter upstream of this fitting rather than mixing connection types at this tee.

trying to tie three DIN tube lines together, what are the ends on this tee?

All three ports are DIN tube connections with M36 x 2.0 threads in size L28. Two ends are male, and the branch end is a female M36 x 2.0 L28 swivel connection.
