fitting's made from carbon steel, so how's it hold up when it's exposed to moisture or rough conditions out in the field?

Corrosion resistance comes from the Dura-Kote plating applied to the carbon steel body. That coating is specifically what keeps the fitting from degrading when it sees moisture, grime, or other harsh environmental exposure. It's one of the main reasons this fitting tends to hold up well in demanding field conditions rather than rusting out prematurely.
