pump's got the adjustable max displacement stop on it -- does that mean I can dial back how hard it's working without swapping anything out?

Yes, that feature lets you set a mechanical limit on how far the pump strokes, so you can cap output without pulling the unit or changing components. It's built right into the pump, so adjustments happen at the pump itself rather than somewhere else in the circuit. That said, the single shaft seal is part of the same assembly, so just keep that in mind when you're planning access for any adjustments down the road.
