Trying to tie two same-size DIN tube lines together, is this the female-to-female union for S30 with M42 x 2.0 threads?

For joining two DIN tube ends of the same size, this union is set up female on both sides with M42 x 2.0 threads and an S30 DIN tube connection on each end.

both sides are M42 x 2.0 female DIN, does that mean this is strictly for joining two lines of the same size, or can it adapt between different tube sizes?

Both ends are identical, M42 x 2.0 threaded and sized for S30 tube on each side. So yeah, this one is same-size only. If you're looking to step up or down between different tube sizes, you'd need a different fitting altogether. For a straight S30-to-S30 female DIN connection, though, this does exactly what it's supposed to.

Will this here fitting work with standard DIN connections, or is there something special I need to know?

This union uses Female DIN Tube connections on both ends, so it's made to work with other standard DIN fittings. Just make sure everything's sized for S30 tube and M42 x 2.0 threads, and you should be good to go.
