got a 3/8 BSPP port on a manifold. is this the right elbow to screw in and then push my tube into?

For the threaded side, it matches a 0.375 BSPP male end. The other end is a push to connect connection, so it is meant to accept tubing directly on that side.

what kind of tubing can you actually run with this fitting? trying to figure out if it'll work with the polyurethane line we got on hand

Polyurethane works fine as long as it's 90A durometer or softer. Beyond that, nylon, polyethylene, and PVC tubing are all compatible with this push-to-connect end. It covers a pretty wide range, so most common tubing types used in light pneumatic and fluid line work will fit without issue.
