got 1/4 inch tubing, is this clamp the right size or am i gonna be fighting it

It’s built for 1/4 inch tubing. If your line is 1/4 inch OD tubing, this is the matching clamp size in the 100-200 Series.

clamp says 316 stainless -- does that include the bolt and nut too, or just the body itself?

All three components carry stainless construction. The clamp body is 316 SS, the nut is a stainless Nylock, and the stud is a stainless weld stud. So the whole assembly holds up without mixing in a carbon steel weak point that could corrode out on you.
