Will this reducer coupling hold up alright in a water line application running about 120 psi?

This reducer is rated to 150#, so it should handle that pressure without any problems.

For steam service, malleable iron fittings like this one rated at 150# are generally well-suited to low-pressure steam systems, which is a common use case for this class of fitting. Shop air at typical working pressures falls well within that 150-pound rating too. got a 1-1/2 inch line but need to drop down to 1 inch. is this the right fitting for that
