fitting's made of carbon steel, will it hold up decent against rust and corrosion out in the elements?

Carbon steel by itself isn't the most corrosion-resistant material, but Eaton put a Dura-Kote plating on this fitting specifically to address that. It gives you better protection than bare steel would in typical outdoor or exposed environments. For general purpose hydraulic use, that coating does real work keeping rust at bay over time.
