fitting's made of carbon steel -- will it hold up okay in a shop environment where there's moisture and grime on the equipment pretty regular?

Carbon steel on its own would be a concern in that kind of environment, but the 06E-608 comes with Dura-Kote plating applied over the steel. That coating is specifically there to fight corrosion, so regular shop grime and moisture exposure is well within what this fitting is built to handle. It's one of the reasons this part gets used in general-purpose hydraulic setups rather than needing a stainless alternative for everyday conditions.
