Does this fitting work with a tube OD of 5/8 inch or is it strictly for 3/4?

It covers both. The bore thread on this fitting is sized for a tube OD range of 5/8 to 3/4 inch, so either size falls within spec. The male JIC end is a 1-1/16-12 thread built to SAE J514, so as long as your mating connection matches that standard, you're in good shape on both ends.

i’ve got a hose end that’s 1-1/16-12 JIC, is this the straight adapter that matches that thread?

Match it up by thread and style. One side on this fitting is a male JIC SAE 37 degree flare with a 1-1/16-12 thread, built to the SAE J514 spec.
