Will this spool valve hold up if I'm runnin' it pretty hard, near its max torque rating?

This Danfoss/Eaton XLS series spool valve is built with a cast iron construction, which should hold up well even when you're pushing it towards that 342 Newton meter torque rating. Just keep an eye on your flow rate, making sure you stay around that 57 liters per minute mark, and you ought to be in good shape.

got a turf care machine that needs a low-speed high-torque motor swap, 342 Nm enough to get the job done on something like that?

For turf care equipment, 342 Newton metres is right in the wheelhouse of what these applications typically call for. The XLS Series was built with exactly that kind of work in mind, so you're not forcing a compromise by putting it there. The low-speed Geroler design is what makes that torque output practical at working speeds rather than just on paper.
