What size wrench do I need for this lock nut?

The C hex size on this bulkhead lock nut is 1.000 mm, so that's the wrench you'll need.

what thread size does this bulkhead lock nut run? trying to match it up with existing fittings on my system

It runs a 3/4-16 thread with a male JIC SAE 37 degree flare connection, sized for 1/2 inch tube OD. That configuration follows SAE J514 specs, so it'll line up with any standard JIC fittings built to that same spec.
