reckon this would hold up alright in a marine environment, out on a shrimp boat maybe?

Flow rate on this thing is listed at 115 liters per minute, is that enough to run it in a press application without starving the circuit?

For press applications, 115 liters per minute is a solid flow capacity. The DG4V4 series is explicitly listed for press use, so the valve is built with that kind of demand in mind. As long as your system is sized to deliver at or near that rate, you should have enough flow moving through to keep the circuit fed properly under load.
