flow rate on this valve is listed at 115 litres per minute -- is that enough for a press application or are we gonna be cutting it close?

The DG5S4 series is explicitly listed for press applications, so it's been put to that use in real industrial settings. Whether it's a tight fit really comes down to your specific circuit design and peak flow demands, but the valve isn't undersized for that category of work by any stretch.
