Will this here valve work with standard hydraulic fluids, or do I need something special?

Buna-N seals make this valve perfectly suitable for use with standard hydraulic fluids, so you shouldn't need to worry about sourcing anything special.

Flow rate on this thing is listed at 1,100 litres per minute, is that accurate for a two-stage valve, or is that the ceiling under ideal lab conditions?

That 1,100 litre per minute figure is the rated flow capacity for this valve. Two-stage directional control valves like the DG5V-10 use a pilot stage to actuate the main spool, which is exactly what allows them to handle flow volumes that a single-stage valve couldn't manage at this size. So yes, that number reflects the design capability of the valve, not a best-case scenario pulled from a controlled test environment.
