What kind of fluids can I run through this directional valve?

It's got Buna-N seals, so it's made to work with hydraulic fluids compatible with that material.

Flow rate on this one shows 115 liters per minute, is that enough to run a press application without starving the circuit?

For press work, 115 liters per minute is a solid flow capacity and falls well within the range that most industrial press circuits operate at. This valve is actually listed with press applications as one of its intended uses, so it's not a stretch to run it in that kind of setup. Pair that with the three- or four-way directional control and you've got good flexibility for how the circuit is configured.
