Got a high-flow press circuit running around 700 LPM, would this Vickers valve hold up to that kind of demand?

Right at the upper end of what this valve is rated for, so yes, 700 litres per minute is exactly the ceiling it's built to handle. It's a pilot-operated, two-stage design, which is what you want when flow gets up that high. Single-stage valves tend to struggle at those volumes, but the two-stage setup here manages that load more reliably. It covers three- or four-way directional control, so depending on how your press circuit is configured, it should fit right into the application without needing a workaround.
