got a DG4V4-01 valve on a press, and I’m trying to figure out what this one actually does. Is it a 3-way or 4-way directional valve?

Function-wise, it falls in the three or four-way directional control valve group for the DG4V4-01 single stage series, so it is used to route hydraulic flow to control actuator direction.

got a press application running hydraulics and need to know if this Vickers valve handles decent flow, what's the max on this thing?

Rated flow tops out at 115 litres per minute, so it's got enough capacity to hold up in press environments without choking the circuit. That's plenty for most single-stage directional control setups running in that kind of service.
