Will this here valve hold up okay in a machine shop environment where it's gonna get splashed with coolant and grime from time to time?

Flow rate on this one listed at 120 liters per minute, is that enough for most machine tool setups or is it on the lower end?

For general machine tool applications, 120 liters per minute is a solid working range. Most standard machine tool circuits don't push anywhere near that ceiling during normal operation, so you've got good headroom there. It's a systemstak design, which also helps keep things tidy on the installation side and cuts down on the number of external connections you'd otherwise be managing.
