flow rate on this thing is listed at 700 litres per minute -- that enough to run a decent-sized press without choking out mid-cycle?

For press applications, 700 litres per minute is a solid ceiling. Most industrial presses running standard hydraulic circuits operate well within that range, so you're unlikely to hit a flow restriction under normal duty. The valve also covers both three- and four-way configurations, which gives you flexibility depending on how your press circuit is laid out. As long as your system demand stays under that 700 LPM mark, this valve won't be your bottleneck.
