Flow rate on this one is listed at 115 liters per minute -- is that enough to handle a press application without choking the system?

For press use, 115 liters per minute is a solid flow capacity and falls well within the range this valve was built for. Press is actually one of the named applications for this model, so it's not a stretch to run it in that environment. Just make sure your system's demand doesn't regularly spike above that threshold, and you should be in good shape.

If I'm usin' this in a marine environment, will that Buna-N seal hold up okay against saltwater?

Buna-N provides good resistance to petroleum-based fluids, water, and some mild chemicals, but it's generally not recommended for prolonged exposure to saltwater. Consider a valve with seals made of a more resistant material if saltwater exposure is constant.
