got a press setup running pretty high flow demands and wondering if this valve can actually keep up without choking out the system

At 700 liters per minute, this valve handles serious flow without becoming a bottleneck. Press applications are explicitly listed as one of its intended uses, so it's built with that kind of demand in mind. If your system is pulling anywhere near that flow rate, you're in the right range.
