Can this handle the constant start and stop on a big metal press without wearing out too quick?

Application in presses is definitely supported. This Vickers valve is made with a Buna-N seal material, which offers good abrasion resistance in hydraulic applications involving constant cycling.

Flow rate on this one says 700 litres per minute, is that gonna hold up for press and die casting work, or is that more of a ceiling you don't want to push?

That figure represents the rated flow rate for this valve, so it's built to handle the demands those environments put on a directional control system. Die casting and press use were specifically called out as intended applications, so you're not working against the grain of what this valve was made for.
