flow rate on this thing listed at 700 litres per minute -- is that enough for high-volume press or primary metal work?

For press applications and primary metal processing, 700 litres per minute is a substantial capacity and falls well within what those environments typically demand from a directional control valve at this size. The DG5V-8 series was built with exactly those use cases in mind, so you're not pushing it into territory it wasn't meant for.
