running this on a press setup and need to know if 115 liters per minute is the max flow or just rated flow for normal operation

Rated at 115 liters per minute, that figure represents the flow capacity for this valve under standard operating conditions. For a press application, that puts it well within the working range this valve was built for. Press systems are actually one of the listed applications, so you're not pushing it into territory it wasn't meant for.
