flow rate on this thing is listed at 700 litres per minute -- that right for high-demand press or primary metal work, or is that more of a ceiling you'd rarely hit in practice?

That rating reflects the valve's upper capacity, so real-world demand in most press cycles will run below it, which gives you headroom rather than a hard limit you're chasing.
