flow rate on this thing goes up to 700 LPM -- that enough to run a press circuit without choking the system down?

For most press applications, 700 litres per minute gives you plenty of headroom. The DG5V-10 series was built with press work in mind, so that flow capacity is right in line with what those circuits typically demand. As long as your system is sized to move that volume without excessive back pressure, you should not see any flow restriction issues running it through this valve.
