three performance levels is kinda vague to me, what's actually the difference between ultra, high, and standard on this valve, and how would somebody know which one they need?

Each tier reflects a different level of control precision and response performance. Ultra is the top end, suited for applications where tight, repeatable flow control really matters, like test equipment or turbine control systems. High sits in the middle and handles most demanding industrial work without the cost of the top spec. Standard covers general-purpose use where extreme precision isn't the priority. If your machine requires close tolerances or fast response, step up. If you're running something more forgiving, standard or high will likely do the job fine.
