What kind of hydraulic fluid can I run through this thing?

Buna-N seals mean it’s compatible with a good range of hydraulic fluids, so you shouldn’t have problems there.

Flow rate on this one's listed at 80 litres per minute, that enough to handle a mid-size press application without starving the circuit?

For most mid-size press setups, 80 litres per minute gives you solid headroom. The DG4V-3 series was built with press applications in mind alongside machine tool and die casting work, so the flow capacity lines up well with that kind of demand. Just make sure your system design keeps the valve operating within that ceiling and you should be in good shape.
