Can this handle, like, runnin' 700 liters a minute without givin' out?

That flow rate is right at the valve's maximum. You'll get the performance you need as long as your system is set up to stay within the recommended operating parameters.

flow up to 700 LPM on this thing, is that actually usable in a press application or is that more of a theoretical ceiling?

Two-stage pilot operation handles the kind of high-flow demand press circuits put on a valve without the instability you'd get from a direct-acting design at those volumes.
